This week, I have tried a Pauillac wine (Gabare de Croizet-Bages 2009).
Pauillac is located in the Medoc region, on the left bank of the Garonne river.
That soil, made of round stones which rolled over from the riverflow, are more adapted to Cabernet Sauvignon grapes, which is why most Medoc will be dominantly Cabernet Sauvignon - a grape with more strength, more tanin, which is more robust than its usual companion Merlot.
The strength of the wine will, of course, strongly depend on its structure - here a 62% Cabernet Sauvignon, we can expect some quite strong tanins exploding in your mouth.
We notice dark, rich colors which are the combination of a high level of Cabernet Sauvignon, and a wine which has already aged over 7 years.
The smell and first taste are woody, slightly acid, with balanced tanins which turn to more fruity notes afterwards. Very long wine, in which there are hints of orange, and even my father's favorite cake (Rum baba)...
Quite an astonishing wine, very complex, it personally met all my expectations. At 66$ a bottle, it is really worth it!
